Chickpea veggie burgers

This recipe is for quick and tasty chickpea veggie burgers. Stuffed full of goodness and ideal for vegetarians who don’t want to restrict themselves to just salads.

This recipe will allow you to make between 10 and 16 patties depending on how thick you like them. I personally prefer them to be slim.

Once all the ingredients have been mashed, diced, sliced or grated, you simple need to mix them together to form patties and fry lightly to ensure they keep their shape. Free them and once you’re ready to eat them, simply stick them on the grill or fry them.

You’ll need:

  • 1 can of chickpeas
  • 3 medium sized potatoes
  • 1 large carrot
  • 1 bell pepper (red or green)
  • 1 onion
  • 1/4 cup of breadcrumbs
  • 1 egg
  • 1 cup of canned corn kernels (drained)
  • 1 cup of canned green peas (drained)
  • 1 table spoon of Soy sauce
  • A pince of salt and pepper

Grated carrot
The first step is to finely grate the carrot. onion and potatoes. We start with the carrot and then the onion before the potatoes since they’ll go brown if you leave them sitting around while you’re working on the other ingredients.  The carrot will act as a good binder for the burger, add a slight flavour and of course help you see better in the dark.
Diced bell pepper The next step is dice a large bell pepper (green or red).
Mashed green peas, corn kernels and chick peas Add the chickpeas, corn kernels and green peas into a large bowl and mash using a fork. or fine masher.

The final step is to add all the previously prepared ingredients into one large bowl along with one cracked egg, the breadcrumbs, a tablespoon of Soy sauce and a pinch of salt/pepper.Mix all of this thoroughly by hand.
Lightly frying the patty mix Once you’ve finished mixing everything together you should form a ball of the mix in your hand and place into a frying pan. Flatten the ball into a burger shape and fry lightly to ensure the patty keeps its composure.
Veggie patties ready for storage After you’ve lightly fried all the patties you can store in a container and freeze until you’re ready to eat. Simply remove from the freezer and grill or fry as you would any other burger.
